Ingredients
- 10 chicken breasts
- 3 tablespoons white pepper
- 14 ounces creole seasoning
- 1 ounce baking powder
- 1 cup coconut flour
- 1 cup almond flour
- 1/2 cup ranch seasoning
- 6.5 ounces sugar-free ketchup
- 2 tablespoons black pepper
- 7.3 ounces bagel spice blend seasoning
- 10 ounces unsulfured unsweetened coconut flakes
Directions
Preheat the oven to 375°F.
Pound the chicken breasts to an even thickness.
In a bowl, combine the white pepper, creole seasoning, baking powder, coconut flour, almond flour, and ranch seasoning.
Coat the chicken breasts in the seasoning mixture, ensuring they are thoroughly covered.
Heat a large oven-safe skillet over medium-high heat and add a bit of cooking oil.
Sear the chicken breasts on each side until golden brown, about 2-3 minutes per side.
Remove the chicken from the skillet and set aside.
In the same skillet, add the sugar-free ketchup and black pepper, stirring to combine.
Return the chicken breasts to the skillet, spooning some of the ketchup mixture over the top.
Sprinkle the bagel spice blend seasoning and coconut flakes over the chicken breasts.
Transfer the skillet to the oven and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F.
Let the chicken rest for a few minutes before serving.
