Ingredients
- 1 cup carrots, grated
- 1 cup frozen corn, thawed
- 1/2 cup all-purpose flour
- 1/4 cup quick oats
- 1/4 cup green relish
- 2 tablespoons olive oil
- 1/2 teaspoon ground ginger

Directions
In a large mixing bowl, combine the grated carrots, thawed corn, all-purpose flour, and quick oats.
Add the green relish, ground ginger, ground cinnamon, ground cumin, dried rosemary, ground black pepper, and table salt. Mix well.
In a separate bowl, whisk together the soy milk and cornstarch until smooth. Pour this mixture into the carrot and corn mixture and stir until fully combined.
Add the maple syrup and chopped fresh ginger to the mixture and mix until evenly distributed.
Cover the mixing bowl with plastic wrap and refrigerate for 15 minutes to allow the mixture to firm up.
Heat the olive oil in a large non-stick skillet over medium heat.
Once the oil is hot, use a spoon to scoop the mixture and form it into small patties in the skillet.
Cook the fritters for 3-4 minutes on each side or until golden brown and crispy.
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Sprinkle with cayenne pepper for an extra kick of heat before serving.
